Vegetarian BBQ: Tofu Marsala Cutlets

Tofu Marsala is not only delicious, it smells absolutely amazing… I’m salivating now just thinking about it!

Vegetarian BBQIngredients:

500g firm tofu
1/2 cup Marsala Wine
1/4 cup Soy Sauce
1/4 cup water
2 tablespoons Maple Syrup
2 tablespoons Olive Oil
1 tablespoon minced garlic
1 tablespoon Dijon Mustard
1 teaspoon dried thyme

Method:

1. The night before the BBQ slice the tofu into slabs about 1/2 cm thick.
2. Lay tofu ‘cutlets’ in a dish.
3. Whisk remaining ingredients in a bowl and pour over tofu cutlets.
4. Allow to marinate overnight.
5. Cook tofu cutlets on a BBQ plate, pouring remaining marinade over them. They don’t take long to cook – it’s up to you: some people prefer just to heat them, others prefer to cook until almost crispy. The marinade will caramelise during heating… yummmmmmmmmmmm!

If you’re catering for non-vegetarians as well, the marinade will also work on their BBQ meal as it cooks.
