June’s Muesli Bar Slice
June, one our Sustainable Living Wise Website ReadersĀ (andĀ a damn fine cook!) shares this yummy recipe with us. And the ‘yummy’ bit I can personally testify to!
Ingredients:
1/2 cup dried cherries
1/2 cup dates
1 cup sultanas
1 cup rolled oats
1/4 cup wheat bran
1/2 cup crushed Weetbix
1/4 cup sunflower kernels
1/4 cup plain flour
60g butter
1/4 cup honey
2 tablespoons brown sugar
1 egg
Method:
1. Mix together the oats, wheat bran, Weebix, sunflower kernels, flour, cherries, dates and sultanas in a large bowl.
2. Melt butter, honey and brown sugar in a saucepan and add to dry ingredients.
3. Stir in egg and milk until well combined.
4. Press into a greased and lined lamington tin.
5. Bake 15 -20 mins in moderate oven (180degrees celcius).
6. When cooled cut into slices.
* Note: If you are vegan simply substitute the butter with oil or soy margarine, and the egg with a product such as Egglike.
