Here’s a home-made Salsa recipe that’s a great alternative to buying commercial Salsa. It’s pretty heavy on the avocados, because we absolutely love them.
I made it about a week ago to accompany some re-fried beans and taco shells over which LTSH (Long Term Suffering Husband) grumbled, “Oh no! Not that brown stuff again!” But as he began munching I noticed that he smacked his lips in enjoyment and gobbled it all down, mumbling through a mouth-full of the mexican munch that it was ‘yummmmm’.
We’ve since had it with home-made Lime and Pepper Chips, which are simply made from sliced pita bread brushed with olive oil and sprinkled with a little lime juice and pepper and then baked for about 10 minutes in an 180 degree oven. Yuuuuuuuuuuummmmmmm. You can sprinkle these with your favourite herbs as well for variety.
Here’s the Salsa Recipe:
4 avocados (chopped)
1 tablespoon lime juice
1 tablespoon ground coriander
1 tablespoon ground cumin
1 red onion (chopped)
1/2 small clove garlic (chopped)
2 large tomatoes (chopped)
1 large red capsicum (chopped)
handful of fresh coriander (chopped)
2 tablespoons olive oil
Place avocado in a bowl.
Gently stir in lime juice.
Put ground coriander and cumin in a pan.
Stir over medium heat for 1 minute.
Allow to cool.
Add cooked spices, onion, garlic, tomatoes, capsicum, fresh coriander and olive oil to avocado.
Stir gently.
Remember to use Organic Produce where possible (you’ll appreciate the extra taste). The raw garlic makes it very zesty – so omit it if you’re not keen on it, or if you intend serving this at the beginning of a hot date.
